Originated in the town of Pilsen, of the Czech Republic. The most classic of pilseners. Their signature is the use of Saaz hops and a golden color. They are around 5% ABV. The most hop-forward classic lager brewing style in terms of flavor and aroma. The good kind of skunky.

(German dark lager) Pronounced malty aroma and flavor that dominates over a clean crisp moderate hop bitterness. They can be chocolaty, chewy, and often exhibit a bread-like aroma, from the use of Munich malt. Colors range from light brown to dark brown.

Double IPA with a blend of Ariana, Pacific Jade, Eukanot and Denali
With an obscene ABV range of 7.5%-10%, just take an India Pale Ale and feed it steroids, ergo the term Double IPA. Although open to the same interpretation as its sister styles, you should expect something robust, malty, alcoholic and with a hop profile that might rip your tongue out. The Imperial usage comes from Russian Imperial stout, a style of strong stout originally brewed in England for the Russian Imperial Court of the late 1700s. Its application to an unrelated style makes little sense to many, so Double IPA is quickly becoming the preferred name. You can thank west coast American brewers for this somewhat reactionary style. Cherry Limeade Saison brewed with With Oats, Lactose, and Conditioned on Cherries & Limes
You could call this style a "quick-sour". To simplify, kettle sours are infected before the boil. Traditional sours are infected after the boil. Sour beers can be "soured" during the mashing process when lactobacillus bacteria eats sugars and convert them to acids, producing that sought-after pucker. They can be also soured in the boil kettle before the heat is turned up and the bacteria is killed off or pasteurized. The latter process is called kettle souring. Traditional sours often are inoculated with lactic acid bacteria (multiple strains of Pediococcus and Lactobacillus) and sometimes use Brettanomyces yeast after the boil for extra fermentation. They can then ferment up to two years until poured, a key reason why they are more expensive than kettle sours. Don't be a kettle sour hater. It doesn't become you.

In many ways, the German Helles lagers embody the flavor profile that the large American mega-breweries are trying to capture. An excellent example of subtlety in beer making. 4.5%-5.5% ABV, and very low hops (18-25 IBU)

A golden top-fermenting beer that originated in Cologne. Medium bodied and usually around 5% abv.
2	Eisbock of Aventinus Draft Eisbock-Germany Schneider & Sohn 12.0% Ale Germany 2 TIX
Originated in Einbeck Germany in the 1200's, the signature of this style is a technique that makes beers stronger. The beer is concentrated by allowing the water to freeze {but not the alcohol}. After a freezing period of several days to over a week, the frozen water & protein are removed. The beer becomes both stronger and "clarified". This process can be done to both ales and/or lagers, but most versions are lagers, which respond better to the process. Usually among the strongest beers around (9%-14%).

Saison, Traditional
The Saison style began as a pale ale brewed in the cooler, less active months in farmhouses in Wallonia Belgium, and stored for the summer drinking. These farmhouse beers would have been of a lower ABV than modern saisons. Brewing outside the summer months was common before the discovery of refrigeration, due to the likelihood of the beer spoiling while fermenting in the summer. After brewing, the beer was stored until the summer when the main consumers would be seasonal farm workers ("saisonniers"). Historically, saisons did not share enough identifiable characteristics to pin them down as a specific style, but rather were a group of refreshing summer ales made by farmers. Each farm brewer would make his own distinctive version. The modern style has been largely defined by Saison Dupont, a beer that's been made in Tourpes Belgium since the late 1800's. In the late 1980's or early 90's an importer stared selling Saison Dupont in the U.S. and the rest is history. Today Dupont is widely regarded as the standard bearer of the style. Modern saisons are generally highly carbonated, fruity and spicy�sometimes from the addition of spices.

3	Kronenbourg Blanc Draft White (Wit) Bier/(Biere Blanche)-Belgium Kronenbourg 5.0% Ale France 1 TIX
1664 White is a fresh and fruity white beer. Because of its flavor and its design, it embodies the elegance and taste of French in the world of wheat beers. Authentic, it is accessible and slightly fruity, revealing subtle aromas of citrus, lemon and coriander.
Witbier was originally popularized in Hoegaarden, a small town in a wheat-growing region east of Brussels and Leuven. This style is usually made from equal portions of raw wheat and malted barley, spiced with ground coriander seeds and dried orange peels. The fruitiness imparted by the wheat blends well with the orange and coriander. The style is further characterized by the use of noble-type hops. Wheat beers are identified as being "white" in several brewing nations. Wheat beers can be filtered, but less easily than those made from barley malt. They usually tip the scale around 5% ABV.
4	Alexander Draft Flemish/Flanders Red-Belgium RODENBACH 5.6% Ale Belgium 3 TIX
RODENBACH Alexander is a blend of 2/3rd aged RODENBACH (2 year matured beer from oak standing Foeders) and 1/3rd young ale, then macerated with sour cherries.
A Flanders Red, are commonly referred to as the "red" beers of West Flanders. Belgian Red Beers are typically light-bodied brews with reddish-brown colors. They are infamous for their distinct sharp, fruity, sour and tart flavours which are created by special yeast strains. Very complex beers, they are produced under the age old tradition of long-term cask aging in oak, and the blending of young and old beers.

This beer has a nice light blond robe topped by an abundant white head. The nose is classic with aromas of banana and slight hints of spices.
"Hefe" means "unfiltered" or "with yeast". Clove and banana-like esters produced by particular strains of brewing yeast are signatures of this style. German style wheat beers are highly carbonated, have low hop character and are brewed using at least 50% malted wheat. Sometimes they are called "Weiss-biers", or white beer. This is a reference to the light color of the beer and head.

7	Samichlaus Classic Draft Doppelbock-Germany Eggenberg 14.0% Lager Austria 4 TIX
Brewed only once a year on December 6th, Samichlaus is aged for 10 months before bottling. Serve with hardy robust dishes and desserts, in particular with chocolates, or as an after dinner drink by itself.
Contrary to popular belief, it has been argued that doppelbocks are not really related to bocks, other than by name. They come from a different place and time in history. During the Protestant Reformation (Circa 1517), the Franciscan monks from Paula Italy settled in Munich. These monks would ritually brew strong beer to carry them through the two holy fasts of Lent and Advent. While the beer style can be dated to the 1500's (which makes them a few hundred years younger than bocks), it didn't even get its name "dopplebock" until the early 1900's, when it became a popular style in Munich. The people, comparing it to the immensely popular bockbiers of the day, noticed the difference in color and strength, subsequently giving it the moniker "doppelbock" (double bock). Originally top-femented wheat beers, today they are primarily barley-based lagers. Doppel bocks were brewed with more grain than used for bocks, but not fermented as thoroughly. This left a sweet finish. The "noble" hops used in doppelbocks are for balance and slight aroma, nothing more. Despite their strength, they are a study in subtlety. (17-30 IBU, 6.5%-8% ABV) Traditional bock: Similar to helles bock, yet a couple shades darker in color, and with an even lower level of bitterness (no higher than 30 IBU). Their alcohol content is the same.
7	Straffe Hendrik X-mas Blend Draft Quadrupel-Belgium De Halve Maan 11.0% Ale Belgium 4 TIX
With an ABV range of 9% - 13% and inspired by the Trappist brewers of Belgium, a Quadrupel is a Belgian style ale of great strength with bolder flavor compared to its Dubbel and Tripel sister styles. Typically a dark creation that ranges within the deep red, brown and garnet hues. Full bodied with a rich malty palate. Phenols are usually at a moderate level. Sweet with a low bitterness yet a well perceived alcohol.

Gouden Carolus Tripel was originally brewed for the Knights of the Golden Fleece in 1491. This golden specialty beer is brewed with the best Belgian ripe barley and hops, to preserve as much pure aroma as possible.

8	Melvin Pils-gnar Draft Pilsner- Bohemian Melvin WY 4.5% Lager USA 1 TIX
More full-bodied, slightly sweeter and more malty than German pilseners and may be light amber in color. Bohemian pilseners are also typified by the use of Czech Saaz hops, and may have IBU‘s as high as 45, despite sweetness in finish.
8	Thaiger Style Draft India Pale Ale (SESSION)-American Melvin WY 4.9% Ale USA 1 TIX
The term Session IPA describes a category of beers marketed for their hop-dominant flavor profiles at 'sessionable' levels of alcohol. While this is typically 3.2-4.6% ABV, a few have stretched the definition. This class of beers arose c. 2010 out of the Craft Beer Tradition as a reaction to the trend of increasingly strong beers and greater public appreciation for hoppier profiles around the globe. It is differentiated from American Pale Ale by typically being lower in alcohol and usually having more hop-dominant profiles. While hops used are typically American Pacific Northwest and New Zealand, proprietary/experimental and South African and other hops may also factor into a Session IPA hop bill.

The stars of the hop world. As with a number of brewing styles, IPA was born out of necessity. When the British were colonizing India, the beers they sent down to their troops kept spoiling during the long sea voyage. Today, American craft brewers do more than emulate the style. They continue to push the envelope with strength and bitterness. Named after the city in which it orginated, a traditional Vienna lager is brewed using a three step decoction boiling process. Munich, Pilsner, Vienna toasted and dextrin malts are used, as well wheat in some cases. Subtle hops, crisp, with residual sweetness. They are typically similar to, but a bit lighter in alcohol than Ur-Marzen (Oktoberfest) style lagers.

There's a time & place for everything right? This style is commonly bastardized into something cheap, powerful, and charcoal filtered here in America, but in other parts of the world you can find them made with quality ingredients, class, & finesse. Don't get us wrong. They still do the trick though.

Porters were the first beer style in the world to achieve national distribution, due to the industrial revolution. The style can be dated to the early 1700‘s. It has been argued that porter takes its name from the train porters who used to sell their beer throughout the early British rail system. Another notion is that porter was first produced on a commercial scale in London on the River Thames, where it was sent out on ships bound for other port towns. The darkness of the beer covered up cloudiness and the roasty full flavor helped mask flavor defects. These were helpful beer style characteristics during a period when problems with consistency in brewing were commonplace. Today, porters range from 4%-6.5% ABV, and 20-40 IBU.

SeaQuench Ale is a session sour mash-up of a crisp Kolsch, a salty Gose, and a tart Berliner Weiss brewed in sequence with black limes, sour lime juice and sea salt to make this the most thirst-quenching beer Dogfish Head has ever brewed.
You could call this style a "quick-sour". To simplify, kettle sours are infected before the boil. Traditional sours are infected after the boil. Sour beers can be "soured" during the mashing process when lactobacillus bacteria eats sugars and convert them to acids, producing that sought-after pucker. They can be also soured in the boil kettle before the heat is turned up and the bacteria is killed off or pasteurized. The latter process is called kettle souring. Traditional sours often are inoculated with lactic acid bacteria (multiple strains of Pediococcus and Lactobacillus) and sometimes use Brettanomyces yeast after the boil for extra fermentation. They can then ferment up to two years until poured, a key reason why they are more expensive than kettle sours. Don't be a kettle sour hater. It doesn't become you.

4% - 7% in ABV, Kellerbier is an old and unique German beer style. Unfiltered and unpasteurized, these lagers date back to at least the Middle Ages. The beer is matured, unbunged (beer is exposed), in deep vaults. The final product is a smooth, naturally cloudy beer that's rich in vitamins (from the yeast). Hop bitterness can be high and alcohol will vary.

28	Saison Surfine Bottle Saison, Classic-Belgium Dubuisson 6.5% Ale Belgium 3 TIX
The Saison style began as a pale ale brewed in the cooler, less active months in farmhouses in Wallonia Belgium, and stored for the summer drinking. These farmhouse beers would have been of a lower ABV than modern saisons. Brewing outside the summer months was common before the discovery of refrigeration, due to the likelihood of the beer spoiling while fermenting in the summer. After brewing, the beer was stored until the summer when the main consumers would be seasonal farm workers ("saisonniers"). Historically, saisons did not share enough identifiable characteristics to pin them down as a specific style, but rather were a group of refreshing summer ales made by farmers. "Hefe" means "unfiltered" or "with yeast". Clove and banana-like esters produced by particular strains of brewing yeast are signatures of this style. German style wheat beers are highly carbonated, have low hop character and are brewed using at least 50% malted wheat. Sometimes they are called "Weiss-biers", or white beer. This is a reference to the light color of the beer and head.

Contrary to popular belief, it has been argued that doppelbocks are not really related to bocks, other than by name. They come from a different place and time in history. During the Protestant Reformation (Circa 1517), the Franciscan monks from Paula Italy settled in Munich. These monks would ritually brew strong beer to carry them through the two holy fasts of Lent and Advent. While the beer style can be dated to the 1500's (which makes them a few hundred years younger than bocks), it didn't even get its name "dopplebock" until the early 1900's, when it became a popular style in Munich. The people, comparing it to the immensely popular bockbiers of the day, noticed the difference in color and strength, subsequently giving it the moniker "doppelbock" (double bock). Originally top-femented wheat beers, today they are primarily barley-based lagers. Doppel bocks were brewed with more grain than used for bocks, but not fermented as thoroughly. This left a sweet finish. The "noble" hops used in doppelbocks are for balance and slight aroma, nothing more. Despite their strength, they are a study in subtlety. (17-30 IBU, 6.5%-8% ABV) Traditional bock: Similar to helles bock, yet a couple shades darker in color, and with an even lower level of bitterness (no higher than 30 IBU). Their alcohol content is the same.

A style derived from "Sommerbiere" (Summer beer). Ur-Marzen, meaning "original of March", are beers that were brewed in March, and made stronger to remain preserved over the summer months, prior to the help of modern refridgeration. A son of the owner of the Spaten Brewery learned of this brewing style while serving as an apprentice in Vienna around 1870. The next year, it was served for the first time at the Oktoberfest in Munich and, due to its popularity, became the official beer style from that point on. Ur-Marzens are full-bodied lagers that are amber in color and usually weigh in at around 6% ABV, with bitterness at about 18-25 IBU.

An old German beer style from Leipzig, Gose is an unfiltered wheat beer made with 50-60% malted wheat, which creates a cloudy yellow color and provides a refreshing crispness and twang. Like Berliner Weisse beers, a Gose will sometimes be laced with various flavored and colored syrups. This is to balance out the addition of lactic acid that is added to the boil. 4% - 7% in ABV, Kellerbier is an old and unique German beer style. Unfiltered and unpasteurized, these lagers date back to at least the Middle Ages. The beer is matured, unbunged (beer is exposed), in deep vaults. The final product is a smooth, naturally cloudy beer that's rich in vitamins (from the yeast). Hop bitterness can be high and alcohol will vary.

Lambics represent the oldest style of beer (and beer making) found in the modern world. Specific to the Brussels area, this style resembles wine and champagne more than any other beer in the world. It is not uncommon for Lambics to have a fermentation period of two or three years, and much of that time in wooden casks. Most of these beers have a conventional alcohol content, in the range of 3%-6% ABV.

Tokyo Black is the second brand at YoHo. A robust porter, well balanced between the malt and the hops. The complex chocolate and roast flavours of dark specialty malts are combined with a floral and slightly spiciness from Perle hops.

It has been argued that porter takes its name from the train porters who used to sell their beer throughout the early British rail system. Another notion is that porter was first produced on a commercial scale in London on the River Thames, where it was sent out on ships bound for other port towns. The darkness of the beer covered up cloudiness and the roasty full flavor helped mask flavor defects. These were helpful beer style characteristics during a period when problems with consistency in brewing were commonplace. Today, porters range from 4%-6.5% ABV, and 20-40 IBU.

The term Session IPA describes a category of beers marketed for their hop-dominant flavor profiles at 'sessionable' levels of alcohol. Pale in color and usually rather bubbly, this style is usually filtered. This, and to some degree strength, are key differences between it and Belgian Triples. The most famous are strong ones like Duvel, at 8.5% ABV. The name is Flemish for Devil. It is not uncommon to find Strong goldens over 10%. There are many beers in this style who carry a name associated with Satan. In fact, there's one called Satan. And Lucifer, and Belzebuth, Horny Devil, etc.

Over-the-top but surprisingly approachable, this twist on the classic style starts with several types of malted barley, rye, oats and wheat. Robust flavors of vanilla, espresso, whiskey, chocolate and roasted grain are balanced by hints of date and plum, with just enough hops to round it all out. Roughly one-third of the final blend is freshly brewed beer; the rest is aged for up to a year (or more!) in both first and second use whiskey casks.

Based loosely on the The Sixth Glass, this quadrupel is separated into a number of oak bourbon barrels where it ages for varying lengths of time, some for up to three years. Cherries are added to make up for the "angel's share" of beer lost during barrel aging.
With an ABV range of 9% - 13% and inspired by the Trappist brewers of Belgium, a Quadrupel is a Belgian style ale of great strength with bolder flavor compared to its Dubbel and Tripel sister styles. Typically a dark creation that ranges within the deep red, brown and garnet hues. Full bodied with a rich malty palate. Phenols are usually at a moderate level. Sweet with a low bitterness yet a well perceived alcohol.

4% - 7% in ABV, Kellerbier is an old and unique German beer style. Unfiltered and unpasteurized, these lagers date back to at least the Middle Ages. The beer is matured, unbunged (beer is exposed), in deep vaults. The final product is a smooth, naturally cloudy beer that's rich in vitamins (from the yeast). Hop bitterness can be high and alcohol will vary.

The stars of the hop world. As with a number of brewing styles, IPA was born out of necessity. When the British were colonizing India, the beers they sent down to their troops kept spoiling during the long sea voyage. With an extra healthy dose of hops and alcohol (40-65 IBU and 5%-7.5% ABV respectively), both having great preservative value, their problems were solved, and the world had another distinctive beer style. Today, American craft brewers do more than emulate the style. They continue to push the envelope with strength and bitterness. Curiously, it‘s much harder to find a true IPA from England these days, with a few notable exceptions, which we will feature.

This is a reference to the light color of the beer and head.

This traditional witbier has been developed under supervision of the father of Hoegaarden and Celis White, master brewer Pierre Celis. This beer has been bottle-refermented, which lent it its specific taste.
Witbier was originally popularized in Hoegaarden, a small town in a wheat-growing region east of Brussels and Leuven. This style is usually made from equal portions of raw wheat and malted barley, spiced with ground coriander seeds and dried orange peels. The fruitiness imparted by the wheat blends well with the orange and coriander. The style is further characterized by the use of noble-type hops. Wheat beers are identified as being "white" in several brewing nations. Wheat beers can be filtered, but less easily than those made from barley malt. They usually tip the scale around 5% ABV.

Contrary to popular belief, it has been argued that doppelbocks are not really related to bocks, other than by name. They come from a different place and time in history. During the Protestant Reformation (Circa 1517), the Franciscan monks from Paula Italy settled in Munich. These monks would ritually brew strong beer to carry them through the two holy fasts of Lent and Advent. While the beer style can be dated to the 1500's (which makes them a few hundred years younger than bocks), it didn't even get its name "dopplebock" until the early 1900's, when it became a popular style in Munich. The people, comparing it to the immensely popular bockbiers of the day, noticed the difference in color and strength, subsequently giving it the moniker "doppelbock" (double bock). Originally top-femented wheat beers, today they are primarily barley-based lagers. Doppel bocks were brewed with more grain than used for bocks, but not fermented as thoroughly. This left a sweet finish. The "noble" hops used in doppelbocks are for balance and slight aroma, nothing more. Despite their strength, they are a study in subtlety. (17-30 IBU, 6.5%-8% ABV) Traditional bock: Similar to helles bock, yet a couple shades darker in color, and with an even lower level of bitterness (no higher than 30 IBU). Their alcohol content is the same.

The Goat is our rustic brett saison, brewed with barley, rye, oats, and wheat, and heavily hopped with European hops. This batch was fermented in our foudre with two saison strains and brett, then allowed to age for three months.
The Saison style began as a pale ale brewed in the cooler, less active months in farmhouses in Wallonia Belgium, and stored for the summer drinking. These farmhouse beers would have been of a lower ABV than modern saisons. Brewing outside the summer months was common before the discovery of refrigeration, due to the likelihood of the beer spoiling while fermenting in the summer. After brewing, the beer was stored until the summer when the main consumers would be seasonal farm workers ("saisonniers"). Historically, saisons did not share enough identifiable characteristics to pin them down as a specific style, but rather were a group of refreshing summer ales made by farmers. Each farm brewer would make his own distinctive version. The modern style has been largely defined by Saison Dupont, a beer that's been made in Tourpes Belgium since the late 1800's. In the late 1980's or early 90's an importer stared selling Saison Dupont in the U.S. and the rest is history. Today Dupont is widely regarded as the standard bearer of the style. Modern saisons are generally highly carbonated, fruity and spicy�sometimes from the addition of spices.

Our barrel blended Imperial Stout. The 2018 version incorporates stock of Imperial Stout aged in Kentucky bourbon barrels for 18 months, 12 months, and 9 months.
Typical alcohol contents exceed 8% ABV, with an extremely rich malty flavor balanced by assertive hopping, and a fruity-ester character. Originally brewed as a winter warmer, for sale in the Tsarist Russian Empire. It is medium dry and distinguished by its great strength.

Bonne Nuit is brewed in collaboration with our Beeritual Advisor, Jerome Seipp.Brewed with European malts, American hops, and our special strain of Belgian yeast. We made this beer to celebrate all of our friends who helped us get where we are today. We hope you enjoy a couple of glasses with your friends as well!
This style is more a reference to strength than anything else. Strong Ales are not usually flavored as are many Belgians, save for a little candy sugar to help increase the alcohol. Belgian Strong Pale/Blonde biers are lighter in color, usually deep gold to light amber. They commonly range between 8%-10% in strength, but can be well over that.

Table Beer Vesper was brewed with Pilsner malt, flaked rye and wheat and lightly hopped with Styrian Golding and Cascade. It was fermented in stainless with one of our favorite Strains of Belgian yeast and then conditioned with Brett.
